protection of my microsoft files following ending of Microsoft support

I plan on buying buying a new computer + Microsoft 8.1 and would like to delete some of the old XP files and transfer others to my new computer. Alternatively I will delete all my old file XP files and start anew.  Can either of these operations be done and if so how?.  Half the world must be asking the same question!!!!
