Windows mirrored drive setup - replace a drive

I have searched the forums and cannot find a proper answer to the best sequence for replacing drives in a mirror.

I realise that RAID 1 is not a backup solution, the system is fully backed up, (disk image, daily critical file backups to external HDD, Flash and cloud) but the system is part of a small office network (6 Windows 7 Pro computers) where uptime access to data is critical.

The machines have been setup with software RAID using Mirrored 1TB WD Green HDD, these are slow and I want to change then for 1TB enterprise drives. None have failed.

Do I:

1. Power down and remove 1 drive and replace with the new one.

2. Convert to Dynamic and rebuild the mirror

3. Repeat for the other one

Will this recreate the "System Reserved" partition on both?

Will the recreate the boot loader and do I have to change anything to select the default boot disk?
